Salmon with Sweet Potatoes and Aspargus

This meal was also from Terra’s Kitchen. It wasn’t too bad.  The whole thing was baked and included strips of sweet potatoes, asparagus, with salmon. The salmon included a rub with mustard and other ingredients mixed together to rub on the salmon.  It wasn’t bad at all and the baking made it healthy.

The big think I was disappointed with was that I had added watermelon as a snack to go with. The watermelon was overripe even though it had a date on it a week in the future.  I really like watermelon, so I was VERY disappointed.  To top it off the side of the sweet potatoes was popped open.  That’s one of the reasons I chose this meal to make it first.

I did enjoy this meal though.  I’m not sure it was worth the money and I especially was disappointed with the watermelon. Our next meal was a kebab, that had the wrong ingredients sent to go with.  We were sent sliced mushrooms in place of whole mushrooms and a roasted corn in place of the regular corn kernels.  So far out of 6 meals, 3 have had issues, plus one of the 3 snacks we’ve gotten.  I think with the cost, I would have cancelled by now if I hadn’t already.  We have two more meals to try.  Hopefully they will improve the odds a little bit.

 

Storm to come

Storms are coming again. I took these pictures one of the last storms that came through.  The sky during the day always has such an interesting color and definition to it.  It’s hard to get pictures of the right color in the sky.  Hopefully these are close….

Fruit Snacks

A friend came and we decided to make fruit snacks for the kids.  Really we were playing with the food processor (Kitchen Aid)!  I have the popular mixer that has all the attachments. The mixer was a gift from my mother last year for my birthday and now has a spot on my counter.

We actually searched the fridIMG_2997ge and randomly pulled out items to shred… I’m not sure the cucumber went over anywhere near as well as the apple slices.  But the slicer did a great job.   We had a fun time and the kids ate healthy snacks!

Seeing the apple slices, I could easily see getting a dehydrator and using them with it. The snacks would keep for extended periods and be healthier than snacks I would find in the stores with preservatives that I couldn’t pronounce.

All in all, it worked pretty well and went fast. The toughest part was cleaning up…. though I have to admit…. being new to the attachment – I do have a piece I still need to figure out how to put back on, as it popped off while I was trying to take the attachment off the mixer and get it cleaned.  It does still look usable though……

Bleu Cheese Steak Salad

Our last meal for the week was a salad with bleu cheese steak. I love bleu cheese, but my husband doesn’t. The rub for the steak had red pepper in it and definitely was spicy. I think the dressing made from mustard was something some people would like.  The salad itself was lettuce, spinach, and small tomatoes with the dressing and steak (and bleu cheese on mine).

This was a little more flavorful than the other meals we’ve gotten, but like the others, it wasn’t something I would choose again.  Additionally the steak was really thick making it hard to get the center done without overcooking the outside of the steak.  I like my steak close to rare, so for me that was ok, but my husband took his and microwaved it to finish the steak off.

We have one more week to go of Terra’s Kitchen and then we’ll swap on to the next set of meals.   So far this week I’d say the pre-prepped meals was convenient, and the container being returnable for recycling was also a big plus (there was still a lot of waste), but the meal choices and the cost didn’t rate as high as the previous plan we tried.

 

 

Parmesan Crusted Tilapia with Veggies

The Parmesan Crusted Tilapia with Veggies and Couscous were from the Terra’s Kitchen box.  Like the previous box they didn’t have as much flavor as some of our previous options from when we ordered Blue Apron.  I did like the Tilapia and the couscous.  The veggies included rosemary as a seasoning.  The recipe called for some oil sprayed on the veggies before baking them – the tilapia was also baked.  The meal felt healthier than the meals we had gotten through Blue Apron, being baked, not fried.  :Like the other meals it was quick to fix. Everything was already prepped and all the ingredients are included.  The mayo with Parmesan was a little hard to mix and spread – but after baking they came out tasting well and without too much on them, they appeared to be healthier.

 

We had Salmon for our next meal which my husband made.  It was a Soy Honey coated Salmon and I really enjoyed it.  It included a veggie mix with asparagus and more!  One more meal in the first box to go after that.!
